Elderberry Marshmallows Recipe

Ingredients:

  • 1 cup water, divided
  • 1/2 cup elderberry syrup (Elderberry Blends Australia)
  • 2 tablespoons gelatin (preferably grass-fed for gut health)
  • 1 cup honey or maple syrup (for sweetness)
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions:

    • Transfer the syrup and gelatin mixture to your stand mixer bowl (or use a mixing bowl if using a hand mixer). Whip on high speed for about 10-15 minutes, until the mixture becomes fluffy, increases in volume, and forms soft peaks. Add the vanilla extract during the last minute of mixing.
  6. Pour into the Baking Dish:
    • Carefully pour the whipped marshmallow mixture into the prepared baking dish, spreading it evenly with a spatula.
  7. Set the Marshmallows:
    • Let the marshmallows sit at room temperature for about 4-6 hours, or until fully set. For best results, leave them overnight.
  8. Cut and Dust:
    • Once set, lift the marshmallow slab out of the dish using the parchment overhang. Dust the top with powdered sugar or cornstarch, then cut into squares.
